The seed oil debate has become one of the most tribal conversations in nutrition.
On one side: people claiming that vegetable and seed oils are the root cause of obesity, heart disease, and chronic inflammation — that the rise in seed oil consumption tracks with the rise of modern chronic disease, and therefore the oils caused it.
On the other side: mainstream nutrition science, which has endorsed polyunsaturated fats (including those in seed oils) as preferable to saturated fats for cardiovascular health since at least the 1960s.
Both positions overstate their case. Here is what the evidence actually shows, without the politics.
What seed oils are
The term covers a broad category: canola oil, soybean oil, sunflower oil, corn oil, cottonseed oil, safflower oil, and grapeseed oil. These are oils extracted from seeds rather than fruits (olive oil) or animal tissue (butter, lard, tallow).
Their primary nutritional characteristic is high polyunsaturated fat content — specifically omega-6 fatty acids, predominantly linoleic acid.
They are the dominant cooking and processing fat in the industrial food supply. The average American diet today contains dramatically more omega-6 fatty acids than it did 100 years ago, primarily because seed oils are cheap, shelf-stable, and functionally useful in processed food production.
The legitimate concern: omega-6 to omega-3 ratio
The strongest evidence-based argument against seed oils is not that linoleic acid is inherently toxic — it’s that the modern diet has produced a radically imbalanced omega-6 to omega-3 ratio.
Historically, humans ate somewhere between 1:1 and 4:1 omega-6 to omega-3. The current average is estimated at 15:1 to 20:1.
Omega-6 and omega-3 fatty acids compete for the same metabolic pathways. High omega-6 intake relative to omega-3 promotes the production of pro-inflammatory eicosanoids. Chronic low-grade inflammation is a driver of cardiovascular disease, insulin resistance, and a growing list of other metabolic problems.
This is real. The research on omega-6 to omega-3 ratio and inflammatory markers is reasonably consistent.
But the imbalance is a ratio problem, not necessarily a seed oil problem. A man could fix his ratio by dramatically increasing omega-3 intake (fatty fish, fish oil) without reducing seed oils. Or he could reduce seed oils while leaving omega-3 intake unchanged. The ratio is what matters.
What the heating evidence shows
One specific concern about seed oils has better support: what happens when they’re heated to high temperatures.
Polyunsaturated fats have lower oxidative stability than saturated fats. When seed oils are heated to frying temperatures (350°F+), repeated heating cycles produce oxidized lipids and aldehydes — compounds associated with cellular damage in animal models.
The relevant practical context: this is most relevant to oils that are repeatedly reheated for frying, as in restaurant or fast food fryer oil that runs continuously for hours or days. Home cooking with fresh seed oils at moderate temperatures produces far lower levels of oxidation products.
This is not nothing. But it is also not the same risk as eating seed oil in a cold-prepared salad dressing.
What the large-scale evidence says
Large randomized trials and meta-analyses on dietary fat and cardiovascular outcomes are genuinely complicated. The science has shifted over 60 years, and the picture is not as clean as either camp suggests.
The original hypothesis — that saturated fat causes heart disease by raising LDL cholesterol, and replacing it with polyunsaturated fat reduces risk — has been partially supported and partially complicated by subsequent evidence.
The Minnesota Coronary Experiment, a large controlled trial in the 1970s that replaced saturated fat with linoleic acid-rich corn oil, reduced cholesterol significantly — but showed no reduction in heart disease mortality, and some analyses suggest increased all-cause mortality in older participants. This study was not published for decades.
More recent meta-analyses find that replacing saturated fat with refined carbohydrates (which is what happened in the low-fat era) increases cardiovascular risk, while replacing saturated fat with polyunsaturated fat has a modest neutral-to-positive effect on hard cardiovascular outcomes.
The clean conclusion — seed oils are unambiguously good or bad — is not available in the research.
The practical position for men who care about performance
Strip away the tribal framing, and the practical guidance is straightforward.
Prioritize fats with strong positive evidence. Olive oil, avocado oil, and animal fats (butter, tallow) have longer histories of human use, better oxidative stability at cooking temperatures, and consistent positive associations in observational data. Use these as your primary cooking fats.
Address the omega ratio by increasing omega-3s. Two to three servings of fatty fish per week (salmon, sardines, mackerel), plus a quality fish oil supplement if intake is inconsistent, will meaningfully improve your omega-6:omega-3 ratio without requiring elimination of all seed oils.
Reduce processed food. This is the real-world intervention that moves the dial most. Seed oils are present in essentially every ultra-processed food. Men who eat mostly whole, minimally processed food have dramatically lower seed oil intake regardless of what oil they cook with. The processed food reduction matters more than the cooking oil choice.
Don’t burn oils you don’t have to. For high-heat cooking, stable fats (avocado oil, butter, ghee, refined coconut oil) perform better and produce fewer oxidation products than polyunsaturated seed oils.
The bottom line
The extreme anti-seed oil position overstates the evidence. The seed oil apologetics position ignores real questions about omega-6 load and oxidative stability.
The evidence supports: favor olive oil, avocado oil, and animal fats for cooking; prioritize increasing omega-3 intake; and dramatically reduce processed food. Whether seed oils specifically are the problem or a symptom of the broader ultra-processed food diet is a question the science has not yet cleanly resolved.
Don’t build your identity around either camp. Build a food environment with the fats that have the strongest evidence behind them, and let the rest of the debate happen without you.
